Yummy Monday: Delicious Christmas Cookies!

Happy Cyber Monday! Are you doing some online shopping? I know I am and I'm looking forward to no having to worry about parking! I love this time of year and baking up a storm to send goodies to our friends near and far. Over the years I have baked favorites that if I don't bake them, I will get someone saying, "Oh - I can't believe you didn't bake (insert their favorite recipe here)." So rather than make only one kind of cookie or candy, I usually end up making quite a variety. Certain cookies work very well to send in the mail and some cookies, not so much (I'm talking to you lace cookie!!). Some cookies are very simple and some are very complicated. This year I've tried to consolidate a bit and ONLY make 12 different varieties. I'm sure that will change but today, this is what my list adds up to. Today for Yummy Monday I found some recipes that might make the "new to me" cut for my holiday baking. What is your favorite cookie to make for the holidays? Grinch Cookies - There is something about these cookies that just are so darling and adorable that we can't help but want to include this on our list! Maybe it's the soft green color, the powdered sugar or the heart quin that just makes us melt! Whatever it is, we know this cookie makes a great addition to your holiday baking!

Raspberry Poinsettia Blossoms - This cookie gets raves for taste and for their color but it does seem like it's a hard cookie to make it look exactly like the photo. I think this cookie would be great as a SPRITZ cookie and think that you could make quite a few of these this way. We LOVE the idea of changing up the raspberry flavor with cranberry, strawberry or cherry!

Hot Chocolate Cookie Cups - When I first saw these cookies I said, OMG - these are adorable!!! You could change out the cookie dough and even the ganache to make different flavors of this cute cup. Dark Chocolate Cup with Salted Butterscotch ganache? Yum.....!

Reese's Cookies - I'm a big fan of the Hershey Kiss Blossom cookie but I feel like EVERYONE makes this cookie! This cookie seems to be a variation on that beloved cookie but with an extra step of using a Reese's Peanut Butter Cup. You had us at Reese's!

Eggnog Cookies - Every year I look for a cookie that will taste like eggnog and every year I seem to find a cookie that is CLOSE but not what I'm looking for. THIS cookie might be the one I've been searching for! Soft and with an icing and extra spice, it looks like a winnder to me!

Cranberry Oatmeal Cookies - I've tried a few different variations on oatmeal cookies over the years and tend to like the addition of cranberries instead of raisins. They just look more festive in addition to tasting better! I like that this recipe also has orange in it which I think compliments the cranberry so nicely.

Palmiers / Photo Credit: Mark Thomas - There are many recipes for Palmiers online that use frozen puff pastry dough and they will all look nice and taste OK but to me, missing the butter in the Palmier is like Christmas without Santa! You've gotta have the butter!! This recipe is not the traditional way to make a Palmier but it will produce a buttery and delicious cookie that will look impressive. You can also make the dough ahead of time and freeze them and then just slice and bake when you want to have them.

Shortbread Bites - I love the idea of these itty bitty cookies with sprinkles that you can change to make endless amounts of color combinations! What a festive way to add a little color and have some sweets to munch on!

Butterscotch Bars - I've been seeing a lot of butterscotch inspired recipes lately which makes me think that Butterscotch is the new Caramel. I love both so it's not a problem but this recipe for Butterscotch Bars sounds very intruiging. I love bar cookies because they usually bake pretty quickly and they ship very well.
