Foodie Friday - What to do with Leftovers?
You've made it through Thanksgiving! Now what to do with all those leftovers? While you are all waking from your food comas this morning, we thought we would take today to share with you a great recipe we saw on The Chew for Thanksgiving Leftovers. Daphne Oz's Stuffing Stuffed Peppers
- 6 large red bell peppers
- 4 cups leftover stuffing
- 2 cups pulled leftover turkey
- 2 cups leftover gravy
- 1/2 Greek yogurt
- 1/4 cup chives (chopped)
- 1/2 gruyere cheese (grated)
- Olive Oil
- Salt and Pepper
Preheat oven to 375 degrees. Cut tops of bell peppers, removing, stem, seeds and ribs from inside the pepper. Drizzle olive oil inside the peppers and season with salt and pepper. In a large bowl, toss together the leftover stuffing, turkey and gravy. Spoon about a cups worth into each pepper. Place peppers in greased baking dish and bake for 15-20 minutes. Remove dish from over and top each pepper with a couple tablespoons of gruyere. Turn the oven to broil. Broil peppers for 2-3 mins, or until top is bubbly and golden. Garnish with a dollop of yogurt and a sprinkle of chives.
